This was one recipe that I was surprised that I liked as much as I did (granted I had to tweak it a little). This is another recipe that is good for if you do not have a lot of time, you just basically put the ingredients in the slow cooker and walk away and it doesn’t even require a lot of stirring. I added a protein just because it seems weird to eat a meal without it, but vegetarians rejoice because at its most basic it is vegetarian friendly. You can really add any kind of protein to this recipe just make sure that it is cooked properly. I add smoked sausage just because it doesn’t take a lot to cook plus its generally cheaper than chicken. Enjoy!
Ingredients
- 1/4 cup of Olive Oil $3-4
- 3 pounds or 1 bag of small potatoes (such as Dutch yellow) $3-4
- 4 cloves of garlic, peeled, cleaned, and minced $2-3
- 1 1 oz packet of ranch dressing seasoning $1-2
- 1 tbsp of dried parsley $2-3
- 2 tbsp of grated Parmesan cheese $3-4
- 1 tsp salt $1-2
- 1 tsp pepper $1-2
Servings: 4-6

Directions
- Wash, dry and cut potatoes in halves (or quarters depending on how big they are).
- Spray the inside of the slow cooker with a nonstick spray.
- Place all ingredients except for cheese inside slow cooker and combine.
- Put on lid and cook on LOW for 4-6 hours or HIGH for 3-5 hours until potatoes are tender.
- During the last 30 minutes add Parmesan cheese and stir gently.
- Serve.
